My seasonal favourite this month is Purple Sprouting Broccoli, and I’ve been merrily scoffing it in a wide variety of dishes recently from a cashew nut and sesame soba noodle stir fry to serving it lightly steamed with a grilled salmon and a lime butter dressing. Next on my list is this Chargrilled fillet steak with smoked chilli butter, mushrooms and PSB recipe from Paul Rankin – it sounds totally delicious!

I love sweet potatoes and can’t seem to stop eating them at the moment. Stacked full of fibre, they are a fantastic alternative to white potatoes, especially if you’re trying to balance your blood sugar levels but still fancy some carbs. I love to roast them whole and then top with hummus and sprouted seeds.

This recipe is one of my current lunchtime favourites and is great served with cold meat and salad or just as they are, warm from the oven with fresh cheese crumbled over them. Delicious.

Should serve 2/3 people – depending on your portion size!

You will need
2 teaspoons of harissa paste
2 medium size sweet potatoes
Sea salt
A table spoon of olive oil
100g of blue cheese (I used Brighton Blue, my local favourite, but silton will do)

Method
Pre-heat your oven to 180C/350F/Gas 4.
Wash the sweet potato and then chop it into wedge-shaped chunks (leaving the skin on)
Place in a mixing bowl with the harissa paste, a good pinch of seasalt and the olive oil. 3.) Mix well until all the potatoes are evenly coated.
Place in the oven for around 30 mins or until the potatoes are crisp on the outside but soft inside.
Crumble with your blue cheese and serve.

Our ancestors had no choice but to be seasonal eaters. From their fruit and vegetables to their meat and fish, they were limited to what they could grow and rear from season to season. To carry them through the months when food was scarce, they became adept at pickling, salting, drying and preserving everything they could.

<wp-block data-block="core/more"></wp-block>

Nowadays in Britain, most of us have fridges and freezers so we can easily preserve our own food, and we can pop into the supermarket and buy our favourite fruit, vegetables, meat and fish all year round.

So what is all the fuss about seasonal eating and why should we bother with it?

Because when food is naturally in season it is cheaper, fresher and, ultimately, it tastes better! If you’ve ever tasted a tomato picked fresh from its vine and slightly warm from the sun, or the sweet crunch of a home-grown carrot, then you’ll know exactly what I mean. If you haven’t, you don’t know what you’re missing!

In the UK, we grow sublime seasonal treats, asparagus, apples and berries to name but a few. But if you want to enjoy these foods at their very best (and cheapest) then you’ll need to equip yourself with a bit of seasonal food knowledge. A seasonal food chart, such as this one, is an excellent reference point and a great place to start on your seasonal food adventures.

I love all the colours of summer, especially when in the form of gorgeous fruit and veg. These tomatoes are some of my Mum’s homegrown beauties, the very last of the season. So vivid and totally delicious served with fresh basil and torn mozzarella.

It’s been a while since I’ve been able to attend any of the Brighton Food Society events, so an invite to meal provided by Well Hung Meat Company, hosted by the Food Society, and held at Flour Town in Hove, sounded like an ideal opportunity to get back into all things food. The invite basically mentioned meat and wine – how can a girl refuse?!

The Well Hung Meat Company are based in Devon, specialises in high quality online meat supplies. All the meat is home-grown, organic and produced to the highest standards of animal welfare; they pride themselves on the quality of their products & the knowledge and expertise of their staff.

And their passion for their product was very clear in the brief introductory talk they gave us prior to the meal. They believe that if you eat meat then you should take some responsibility for the welfare of the animal and the process it goes through to get to your table – a sentiment I wholeheartedly agree with.

Their website goes in to a lot more detail about their background, beliefs and values. If you like good meat and care about where it comes from then I encourage you to give it a read!

What we ate:

Charcuterie board

Starter: Beef carpaccio with green beans

Main: Seasoned lamb chops with a homemade potato salad and fresh samphire

Dessert: Lemon Possett with raspberries and a homemade shortbread biscuit (made by Matthew Drennan)

A selection of Pong cheeses (love that name!), all stocked by Well Hung

Plenty of booze (fuzzy heads all round)

Huge thanks to Paul and Matthew from Well Hung for all the lovely food and for coming all the way down from Devon.

Also a massive thanks to Matthew Drennan for allowing us to take over Flour Town for the evening and to the rest of the Food Society gang for being great fun as always!

Autumn is my favourite season – the changes in light, misty mornings and the promise that we’ll soon be wrapping up cosily in hats and scarves. But of course Autumn brings with it some fantastic seasonal produce – pumpkins, elderberries, chestnuts, game, pears, and the daddy of English autumnal produce: apples.

Apple Festival takes place on 21st October each year and orchards and farms up and down the country organise festivities to celebrate this wonderful fruit. What great month to be an apple!

Brogdale Farm in Kent is home to the National Fruit Collection; the World’s largest collection of fruit trees and plants and home to over 3,500 varieties of apple, pear, plum, cherry, bush fruit, vine and cob nut cultivators.

Brogdale has been on my list of places to visit for a while now, so the Apple Festival (20th & 21st October 2012) was just the excuse I needed to hotfoot it to Kent. The festival itself is quite a family affair, with various food & drink stalls, crafts and live music (it’s safe to say that some of the bands were an ‘acquired’ taste).

Included in the ticket price is a guided tour of the orchards, each one being led by one of Brogdale’s knowledgeable staff, many of whom are volunteers. For me, this was one of the highlights of the visit. You can quite literally loose yourself wandering up and down the lines of trees looking at fruits of all different sizes and colours. And with names like the: Marriage-maker, Blackbird, Prince Edward it really is a fantastic way to spend a few hours.

And of course, no apple festival would be complete without a generous dose of apple sampling. At the heart of the festival arena was a large tent with over 400 varieties of apple on display and over 200 for visitors to taste and buy. To be honest, this part of the festival was a bit of a free-for-all, and you had to employ some elbowing tactics to stand any chance of trying the apples that had been laid out. Still, I managed to try plenty and came away a mixed bag (quite literally) of my favourites.

I decided not to cook with the apples I bought, preferring instead as an alternative to dessert. When produce is in season and so tasty it’s sometimes nice to enjoy it just as it is, don’t you think?

]

This recipe has become a fav recently, though it has taken me a little time to get the balance of taste and texture just right. The distinctive flavour of the crab, combined with the subtle sweetness of apple. It might sound a bit crazy but the two really do work well together.

<wp-block data-block="core/more"></wp-block>

I went through a fair bit of trial and error before settling on the final recipe for these crab cakes. My main concern was that the flavour of the apple would be lost when combined with the crab, but, as I discovered, provided the apple you use has a real depth of flavour, such as Cox’s Orange Pippin, you will be able to taste it, albeit subtly.

As luck would have it, Cox’s Orange Pippins are in season this month! If you can’t get hold of the Orange Pippins then any other variety of apple with a firm texture (not floury) and a good strength of flavour will suffice.

The other important point to note is that it’s crucial to remove as much juice from the grated apples as possible or your mixture will just be too wet to form successful fishcakes. Once I’d grated my apples I used a muslin bag to squeeze out as much juice as I could.

You will need
500g crabmeat
500g potatoes
A handful of finely chopped fresh coriander
1 lime
Half a tsp of dried chilli flakes
3 medium-sized apples (Cox are best), grated
Olive oil
Sea salt & black pepper
Serves 4 – 6

Ideally you should make the crab cakes the day before you plan to eat them – they will hold together better if they’ve been left to chill in the fridge over night.

1.) Peel and chop the potatoes, add to a pan of salted boiling water and cook for about 15 to 20 mins, or until tender.
2.) Drain the water from the potatoes and then add back to the pan, add a pinch of salt and pepper and mash.
3.) Add the mashed potato to a large bowl with the crabmeat, grated apple, the grated zest of the lime and half its juice, the chilli and the coriander. Mix until all the ingredients are well combined.
4.) Line a couple of baking trays with greaseproof paper or tin foil and set to one side.
5.) Divide your mixture into portions, shape into patties in the palm of your hand and then place on the lined baking trays. (Dust your hands lightly with flour if the mixture is sticking.)
6.) Chill the fishcakes in the fridge overnight.
7.) When you’re ready to cook, add a tablespoon of olive oil to a frying pan and place on a high heat. 8.) Add the fishcakes to the pan in batches, frying each for about 6-8 minutes, turning halfway, or until they have lightly browned on both sides. Because of the apple, these fishcakes are moister than a lot of recipes so they won’t go ultra crispy. Try to resist the temptation of repeatedly turning your fishcakes; they’ll hold together better and develop a richer brown colour if you’re brave and turn them just the once!

The English cherry season is so very short,so I get really excited when the first of the Kent cherries start to make an appearance. Fat, juicy and the most beautiful deep red, they really are in a different league to the smaller, tasteless imports available all year round in supermarkets.

I invested in an ice-maker a few months ago. Just a cheap and cheerful one, nothing fancy. Not sure it was the wisest move in terms of keeping my waistline trim, but I’m trying to be really good and use only occasionally (by occasionally, read twice a week so far – eek! Excitement gets the better of me some times. Must do more cycling…). The difference a machine makes is quite remarkable: no crystals or lumps. I’m a very happy camper indeed.

My recipe is currently featured in Crumbs Magazine too, but I’ve slightly tweaked the cream/milk ratio here.

So, here’s my current seasonal fav. The combination of sweet cherries & bitter chocolate is pretty special.

You will need
250g fresh cherries

3 tbsp golden caster sugar

80g good quality dark chocolate (70%)

150ml semi skimmed milk

150ml double cream

50g caster sugar

Serves four
1.) De-stone the cherries and cut into halves. Place in a saucepan with the caster sugar and cook over a low heat until softened. Set aside to cool.
2.) Once cool, blend in a food processor until you have smooth puree.
3.) Break your chocolate into tiny pieces (alternatively, place it in a sandwich bag and crush gently with a rolling pin if easier).
4.) In a large measuring jug, add the milk, cream and sugar and cherry puree and mix gently until combined.
5.) Pour the mixture into your ice–cream machine and allow it to churn for a few minutes before gradually adding your chocolate pieces, one spoonful at a time. Timings will vary depending on the type of machine you have. All photography © Heather Elizabeth Wilkinson 2012

The temperature has really plummeted here this week. It’s the kind of cold weather that means you have to hop from foot to foot just to generate enough heat to stop your toes going numb. I basically live off soup when the weather’s like this, and I luckily had enough root veg to whip up a batch today. Soups of this nature can be a tad bland, so I add just a pinch of dried ginger to give it a subtle lift.

You will need

2 tablespoons of olive oil
1 medium onion, sliced
1 garlic clove, crushed
2 carrots, peeled and sliced
1 stick of celery, sliced
1 leek, sliced
150g potato, peeled and diced
150g swede, peeled and diced
½ tsp freshly ground nutmeg
½ tsp dried ground ginger
1 litre milk
Single cream

1.) Heat the oil in a saucepan, add the onion and fry until soft.
2.) Add your garlic, carrot, leek and celery, stir it all together and continue to fry for about 5 minutes.
3.) Next, add your swede, potato, nutmeg and ginger, salt and pepper. Add the milk, bring to the boil then turn down to a simmer for 25 minutes, or until all the vegetables have softened.
4.) Add your soup mixture to a liquidiser and blend together until it is smooth. You can run it through a sieve if you want it extra smooth.
5.) Return the soup to a clean pan, add a little cream, mix and heat thoroughly. Serve with fresh crusty bread.
