<p class="has-text-align-left">When I&#8217;m working at home it&#8217;s all too easy for me to turn into the queen of procrastination. Endless cups of tea, a few loads of washing, a bit of sock pairing and anything else that&#8217;s got nothing to do with what I&#8217;m actually supposed to be doing! I also usually put my oven to good work, either roasting up some veggies for quick meals, baking or slow cooking a stew.</p>



<p class="has-text-align-left">This week I&#8217;ve moved away from my winter staples of roasted root veg and onto my current obsession: fennel! I love this stuff and can quite happily much through a whole raw bulb all to myself. This time I thought I&#8217;d try something a little different by using some roasted fennel in my lunchtime salad. This is a lovely light, protein-packed dish with some pretty punchy flavours. The apple doesn&#8217;t keep so add it at the last minute.</p>



<p class="has-text-align-left"><strong>Serves one but simply double up the quantities for two people.</strong></p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>2 tablespoons of maple syrup<br>1 fillet of ready to eat smoked mackerel (I used peppered mackerel)<br>A handful of dill<br>1 red eating apple, grated.<br>1 bulb of fennel<br>Juice of half a lemon lemon juice</p>



<p class="has-text-align-left"><strong>Method</strong><br>Chop up your fennel into chunks and place on a roasting tray, cover with the maple syrup &amp; give it a good mix round <br>Roast on a medium heat for around 20mins or until it softens and browns.<br>Grate your apple and place into a bowl with water and lemon juice.<br>To serve, place the cooked fennel on a plate and top with the apple and chucks of mackerel, sprinkle with some chopped dill and a little lemon juice.</p>

Packed full of lovely veg, it&#8217;s a great way to get your greens in at the start of your day, or to give you a refreshing boost in the afternoon.</p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>½ cucumber<br>1 handful of spinach<br>1 handful frozen pineapple<br>1 handful of mint leaves<br>Juice of ½ lime</p>



<p class="has-text-align-left"><strong>Method</strong><br>Pop all the ingredients in a blender and blitz till smooth.<br>Enjoy over ice.</p>

<p>If you’ve had a long day and are in need of some hearty comfort food then try this super easy tray bake of loveliness.<br>Gnocchi is brilliant because it’s filling and really quick to cook but it can be a bit heavy if you serve it with a rich cheesy sauce. I find if you opt for a lighter tomato-based sauce you won’t need a nap after dinner. Hopefully&#8230;</p>



<p><strong>Serves 2 </strong></p>



<p><strong>Ingredients</strong><br>1 packet of fresh Gnocchi (400g)<br>2 tsp red pesto<br>1 tin of cannellini beans<br>A packet of vine tomatoes (medium sized, about 10 tomatoes)<br>2 cloves garlic<br>30g pecorino or parmesan cheese, finely grated.</p>



<p><strong>Method</strong><br>Preheat the oven to 200c<br>Drain and rinse the beans<br>Put the beans and tomatoes into a large roasting dish<br>Add two crushed cloves of garlic, a tablespoon of vegetable oil, salt and pepper<br>Roast for about 20mins (or until the tomatoes soften slightly)<br>While your beans and tomatoes are cooking put a pan of water on to boil and cook your Gnocchi according to packet instructions<br>When your roasted beans and tomatoes are ready, remove from the oven, add a tablespoon of red pesto and gently mix to mingle all those flavors</p>



<p>Top your Gnocchi with your roasted tomatoes and beans, sprinkle with all that lovely cheese.</p>

<p class="has-text-align-left">I&#8217;m guilty of eating a little too much meat sometimes and when I want to lighten up mealtimes I always find beans make a nutritious, cheap and versatile option. This recipe is really quick to prepare and the trusty food processor does most of the work for you &#8211; hurrah!</p>



<p class="has-text-align-left"><strong>Serves 2</strong></p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>1/2 tin of chick peas<br>1/2 tin of kidney beans<br>2 spring onions<br>Juice of half a lemon<br>1 tbsp of mayonnaise<br>1 tsp of dijon mustard<br>3 tbsp of breadcrumbs<br>1 tsp chilli powder<br>1 tsp cumin</p>



<p class="has-text-align-left"><strong>Method<br></strong>Preheat grill to medium heat<br>Put all the ingredients into a food processor and blend until well combined.<br>Shape into even sized patties and grill on each side until the burgers start to brown.<br>Serve in wholemeal rolls with a generous spoonful of hummous and lettuce.<br></p>

<p>Back in late summer I was commissioned by the Guild of Master Craftsmen to do the photography for their Superfood Christmas Magazine (yup, shooting Christmas images in the summer &#8211; the strange life of a food photographer!).</p>



<p>Now that the magazine is out I can share the images with you and also mention that if you&#8217;re looking to have a healthier Christmas this year then Superfood Magazine has loads of ideas for tasty dishes that are both healthy and delicious, from canapés and party food to Christmas dinner.</p>

<p>If you&#8217;re suffering from a cold then I&#8217;ve got just the thing to pep you right up. This infusion is so simple to make and includes a huge kick of ginger, a squeeze of fresh lemon and a good spoonful of delicious soothing honey. Sadly this drink won&#8217;t cure your cold, but it will fill your sickly bod with lots of lovely natural ingredients. It tastes pretty good too!</p>



<p>Finely grate a thumbnail sized piece of ginger in a saucepan, add the juice of half a lemon, 1 teaspoon of honey and a mug sized amount of water (you&#8217;ll use this mug again for your finished drink). Place the pan on the hob and gently bring to the boil, stirring so that the honey dissolves. Strain the infusion over a mug (I use a standard tea-strainer) and enjoy.</p>

<p>My seasonal favourite this month is Purple Sprouting Broccoli, and I&#8217;ve been merrily scoffing it in a wide variety of dishes recently from a cashew nut and sesame soba noodle stir fry to serving it lightly steamed with a grilled salmon and a lime butter dressing. Next on my list is this <a href="http://www.bbc.co.uk/food/recipes/chargrilledfilletste_86298">Chargrilled fillet steak with smoked chilli butter, mushrooms and PSB recipe from Paul Rankin</a>&nbsp;&#8211; it sounds totally delicious!</p>

<p>I&#8217;ve been feeling a bit under the weather recently so I&#8217;ve turned my attention to getting my health in order, filling up on lots of wholesome, natural food and taking lots of nice long walks on the Downs.</p>

<p>I do have quite a sweet tooth and I&#8217;ve been reading up on healthier alternatives to the usual tempting array of delicious treats I usually find hard to resist.</p>



<p>This recipe is incredibly easy. Dates pack a huge sugary punch and are fantastic to cook with. The addition of walnuts balances the sweetness of the dates and adds a lovely texture to the bites and their natural oil helps bind the recipe together without the addition of any other liquid.</p>



<p><strong>You will need</strong></p>



<p>250g pitted Medjool dates </p>



<p>250g raw, unsalted walnuts</p>



<p>2 tablespoons of raw cacao powder</p>



<p>Unsweetened desiccated coconut, to coat</p>



<p>Makes around 20 bites</p>



<p>1.) Put the dates, walnuts and cacao powder into a food processor and blitz on a high speed until the mixture sticks together.</p>



<p>2.) Sprinkle the coconut evenly on a large plate</p>



<p>2.) Shape small amounts of the mixture into small balls and then roll in the coconut until evenly covered</p>



<p>3.)&nbsp;Pop the bites in a tupperware container in the freezer until you&#8217;re ready to eat them.</p>

<p>Our ancestors had no choice but to be seasonal eaters. From their fruit and vegetables to their meat and fish, they were limited to what they could grow and rear from season to season. To carry them through the months when food was scarce, they became adept at pickling, salting, drying and preserving everything they could.</p>
<p></p><wp-block data-block="core/more"></wp-block>
<p>Nowadays in Britain, most of us have fridges and freezers so we can easily preserve our own food, and we can pop into the supermarket and buy our favourite fruit, vegetables, meat and fish all year round.</p>
<p>So what is all the fuss about seasonal eating and why should we bother with it?</p>
<p>Because when food is naturally in season it is cheaper, fresher and, ultimately, it tastes better! If you’ve ever tasted a tomato picked fresh from its vine and slightly warm from the sun, or the sweet crunch of a home-grown carrot, then you’ll know exactly what I mean. If you haven’t, you don’t know what you’re missing!</p>
<p>In the UK, we grow sublime seasonal treats, asparagus, apples and berries to name but a few. But if you want to enjoy these foods at their very best (and cheapest) then you’ll need to equip yourself with a bit of seasonal food knowledge. A seasonal food chart,&nbsp;<a href="http://www.bbcgoodfood.com/content/local/seasonal/table/all/">such as this one</a>, is an excellent reference point and a great place to start on your seasonal food adventures.</p>

At this time of year my go-to breakfast is porridge, usually with a honey and a sprinkling of seeds on top. But when I fancy a change I like to make up a big batch of whoesome Bircher Muesli.<p></p>
<p>There are lots of variations of Bircher, some made with milk, some with juice and some just with yogurt. I prefer to use a combination of juice and then add some yogurt in at the end &#8211; I found fruit yogurt works especially well, and you can pretty much use whatever flavour you like best.</p>
<p>The best part of the this recipe is that you can make it the night before and leave the oats &amp; liquid to work their magic overnight. The next day all you need to do is chose you toppings and you have a deliciously satisfying breakfast &#8211; and less prep on the days means more time in bed!</p>
<p>I&#8217;m especially chuffed that this recipe featured in the <a href="http://breakfastbythesea.blogspot.co.uk/2013/09/the-simple-things-magazine-feature.html">Simple Things magazine</a> a few months ago.</p>
<p>Ready for some autumnal breakfast loveliness? Ok, here you go!<br>
<b><br>
</b><b>Ingredients</b><br>
300g of porridge oats<br>
300ml apple juice<br>
3 tablespoons of pumpkin seeds<br>
3 tablespoons of raisins<br>
2 tablespoons of chopped hazelnuts<br>
200ml of either natural yogurt or good quality fruit yogurt (blueberry or raspberry works well)<br>
1 grated apple<br>
A teaspoon of honey to drizzle<br>
A few roughly chopped hazelnuts as a garnish</p>
<div><b>How to</b></div>
<div>Put the porridge oats, chopped nuts, raisins and seeds in a large tupperware container, pour over the apple juice and mix all the ingredients together. Seal the container and refrigerate overnight.</div>

<div>The next day, stir in the yogurt and spoon into serving bowls. Top with grated apple, roughly chopped hazelnuts and a drizzle of honey to taste.</div>
