Mango and Coconut Overnight Oats


As a Mum I’m always looking for time-saving ways to eat well and overnight oats are just bloomin’ awesome. I’m a total coconut addict so the thought of waking up to bowl of this sunshine yumminess adds cheer to early wake up calls from my little human.

Simply sling everything except the greek yogurt in an airtight container (or a large bowl covered with clingfilm) and pop in the fridge to work its magic overnight. Enjoy hot or cold and feel free to add a bit more milk to get the mixture to your liking. As well as the greek yogurt I’ve topped mine with a bit if leftover mango too, just to be fancy.

You will need

600ml coconut milk
300g oats
Zest of half a lime
Flesh of 1 mango, pureed
1 tablespoon of greek yogurt

This recipe makes 5-6 servings
