<p class="has-text-align-left"><strong>Ingredients</strong><br>125g sugar<br>150g oats<br>50g raisins<br>125g butter<br>1tsp vanilla extract<br>1 tbsp golden syrup<br>75g plain flour<br>1/4 tsp baking powder<br>1/4 tsp mixed spice</p>



<p class="has-text-align-left"><strong>Method</strong><br>Heat the oven to gas mark 4 180oc/160oc<br>Grease or line a large flat baking sheet<br>Cream the butter and sugar together until light and fluffy<br>Beat in the eggs and vanilla essence<br>Add in the remaining dry ingredients and mix until well combined.<br>Shape tbsp amounts into balls and place well spaced onto your baking tray.<br>Flatten slightly with a fork so they bake evenly.<br>Bake in the oven for 10 minutes until lightly browned.</p>

<p>If you find yourself overburdened with hot cross buns this Easter then let me tempt you with this recipe. My twist on bread and butter pudding but even easier to make because the fruit is already in the buns &#8211; oh it also has a little luxurious boozy twist. Well why not! </p>



<p class="has-text-align-left"><strong>Serves 4-6 people</strong></p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>6 hot cross buns<br>50ml double cream<br>300ml of whole milk<br>1 teaspoon of cinnamon<br>2/3 tablespoons of whisky (start with two and add more if you&#8217;re feeling adventurous!)<br>2 medium eggs<br>30g granulated sugar<br>25g butter</p>



<p class="has-text-align-left"><strong>Method</strong><br>Cut the buns in half, butter inside each and line up inside a deep heatproof dish.<br>Add the milk, cream and whisky and cinnamon into a saucepan and warm gently. You want the mixture almost boiling, so when you see heat rising from the pan remove from the heat. Resist the temptation to sit and drink the warm, whisky milk!<br>Lightly beat the eggs in a large bowl along with half the sugar. Pour over the warmed milk mixture and give it a good whisk.<br>Pre-heat your oven to 180C/Gas mark 4<br>Pour the whisked milk mixture evenly over the hot cross buns, top with the remaining sugar and then leave to stand for 20 mins. During this time the buns will start to soak up the milk mixture and will become deliciously soft.<br>Bake for around 25-30 minutes, or until the buns are brown and the mixture has set.<br></p>

<p>Ahh, rocky road slices: minimal cooking, maximum chocolate.</p>
<p>If full-on baking isn&#8217;t your thing but you fancy getting creative in the kitchen, you can&#8217;t go too wrong with rocky road</p>

<p>Melting chocolate, butter and golden syrup on the hob is as complicated as this recipe gets, and yet the finished product implies that you&#8217;ve gone to a lot more effort (I won&#8217;t tell if you won&#8217;t!).</p>
<p>However, I didn&#8217;t think there was such a thing as too much chocolate until I tried <a href="http://www.bbc.co.uk/food/recipes/rockyroadcrunchbars_87104" target="_blank" rel="noopener noreferrer">this recipe from the BBC Food website</a>.</p>
<p>The ingredient list calls for good quality dark chocolate, but in my opinion &#8211; and I&#8217;m quite the chocoholic &#8211; it makes the slices far too rich and I was reaching for a glass of water after a couple of bites. I&#8217;d advise opting for a good quality milk chocolate instead.</p>

<p>You can easily pimp up the recipe a bit if you&#8217;re feeling creative &#8211; I added dried cherries to mine, but nuts or raisons also work a treat.</p>

<p><span> There&#8217;s a small chain of Brighton-based coffee shops called Ground, who serve some of the finest coffee in&nbsp;Brighton. That is where I got my first taste of Chocolate Guinness cake.&nbsp;</span><br>
<span><br>
</span><span>The cake is designed to take on the classic look of a pint of Guinness, with its rich dark brown bottom and fluffy white top. But it contains Guinness too &#8211; and that is what gives it its beautifully moist texture.&nbsp;</span><span>Don&#8217;t worry though, it doesn&#8217;t taste of beer.</span><br>
<span><br>
</span><span>One of the best recipes I&#8217;ve found is <a href="http://www.nigella.com/recipes/view/chocolate-guinness-cake-3086" target="_blank" rel="noopener noreferrer">this one by Nigella Lawson</a>, laden with butter, sugar and topped with a vanilla cream cheese topping. It&#8217;s certainly not for the faint hearted, but then this is a celebration cake, so I think its ok to push the boat out every once in a while!</span><br>
<span><br>
</span><span>And if you don&#8217;t fancy making your own and happen to be visiting Brighton, I can&#8217;t recommend <a href="http://groundcoffeehouses.com/category/locations/" target="_blank" rel="noopener noreferrer">Ground</a> highly enough</span>.<br>

<p>This post was inspired by a recent trip to Rye in East Sussex. The weather that day was absolutely bitter &#8211; they type of cold that really gets into your bones, so a hot mug of tea and a decent piece of cake are pretty much essential. I stopped in a lovely little cafe but I was in such a rush to get the train back that I didn&#8217;t pay much attention to the name &#8211; whoops!</p>
<p>Anyway, when I got home I had a urge to bake an enormous batch of rock cakes, loaded with&nbsp;cinnamon&nbsp;and stuffed full of juicy sultanas. Just the thing to accompany a bit of weekend crafting.</p><wp-block data-block="core/more"></wp-block>
<p>I followed&nbsp;<a href="http://www.guardian.co.uk/lifeandstyle/2012/oct/12/rock-cake-recipes-dan-lepard" target="_blank" rel="noopener noreferrer">this recipe</a>&nbsp;by the fabulous Dan Lepard, with my own addition of three teaspoons of cinnamon and 175g of sultanas. I didn&#8217;t go for the chocolate drizzle &#8211; just didn&#8217;t seem right on a rock cake!</p>

<p>Have I mentioned that I moved house recently? Well that’s why things have been a bit quiet on the blog recently. It’s well-known that moving house is one of the most stressful things you can do, and I can confirm this is very much the case.<br>

<p>You never realise how much ‘stuff’ you have until it comes to packing it all up in boxes. I harbour a desire to be a minimalist but quite frankly I’m really kidding myself here. I’m a complete hoarder and the majority of my hobbies involve having physical ‘stuff’. Photography, craft, art, cooking, books – you get the picture. If I were to list the amount of handbags I have any minimalists out there would probably break into a panic-induced sweat.</p>
<p>So anyway, moving house has meant getting used to a new oven. My old house had a fan-assisted gas oven, which would cook most things a lot quicker than any recipe suggested. It also seemed to be hotter on the right of the oven, which meant you had to turn sponge cakes at regular intervals or they’d be lopsided. &nbsp;And no one wants a lopsided sponge cake.</p>
<p>The new place has a slick electric oven, which, as I’ve found, provides a nice even heat. It’s taken a bit of getting used to, making sure I don’t undercook things, but so far cooking with electric has made me a very happy camper.</p>
<p>I had an abundance of carrots in the cupboard this week so I decided to use them in a quick fruity loaf cake. What’s nice about this recipe is that it doesn’t contain any butter – all the moisture comes from the carrots and sultanas. And it’s light and fluffy because you fold in whipped egg whites. A very yummy moist cake and I always feel a bit less guilty eating it because it contains carrots.</p>
<p>You will need:</p>
<p><b>Butter or sunflower oil for greasing your tin</b><br>
<b>200g golden caster sugar</b><br>
<b>4 large eggs, separated</b><br>
<b>200g finely grated raw carrot</b><br>
<b>Finely grated zest and juice of half lemon</b><br>
<b>Finely grated zest of an orange and half its juice&nbsp;</b><br>
<b>100g of raisins or sultanas</b><br>
<b>100g ground almonds</b><br>
<b>200g of self-raising flour</b><br>
<b>A</b><b>&nbsp;pinch of salt</b><br>
<b>1 teaspoon of ground cinnamon</b><br>
<b>1 teaspoon of ground nutmeg</b></p>
<p>1. ) Preheat the oven to 170oC/Gas Mark 3. Lightly grease a loaf tin, about 20 x 10 cm, and line with baking paper.</p>
<p>2.) Beat the sugar and egg yolks with a whisk for 2-3 minutes until the mixture is pale and creamy. Lightly stir in the grated carrot, lemon and orange zest and juice, raisins and ground almonds. Sift the flour, salt and spices together over the mixture and then fold them in, using a large metal spoon.</p>
<p>3.) In a separate bowl, beat the egg whites until they hold soft peaks. Stir a heaped teaspoonful of the egg white into the cake mixture to loosen it a little, and then fold in the rest as lightly as you can.</p>
<p>4.) Pour the mixture into your loaf tin and gently tap the tin on the worksurface to level the mixture.</p>
<p>5.) Bake for about an 1 hour, or until a skewer inserted into the centre comes out clean.</p>
<p>6.) Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.</p>

<p>For me, the perfect chocolate brownie should be rich (but not sickly), dense (but not too heavy) and, without doubt, moist in the middle.</p>

<p>I’ve tried a fair few recipes over the years (all in the name of research!) and my favourite by far is <a href="http://www.guardian.co.uk/lifeandstyle/2004/jun/13/foodanddrink.shopping2" target="_blank" rel="noopener noreferrer">this one by Nigel Slater </a>&#8211; with my own little seasonal twist.<br>

<p>The flavours of chocolate and hazelnut compliment each other perfectly. However, adding a dash of rum to the mix brings a certain element of sophistication – something to warm your cockles on a cold winter&#8217;s day.</p>
<p>In addition to Nigel’s recipe, I added 4 tablespoons of good quality dark rum and approx. 100g of roughly chopped hazelnuts, added at the same time as the flour and cocoa.</p>
<p>And if you don’t manage to eat all your brownies and they should start to go dry (never a problem in my house), simply wrap them in tinfoil and pop them in a moderately pre-heated hot oven for about 15mins – they will magically come back to life!</p>

<p>Nigel Slater&#8217;s Kitchen Diaries is one of my most cherished cookery books, and I find myself returning to it again and again for inspiration. His warm, and somewhat magical, writing style and beautifully simple recipes tick all the right boxes for me.</p>
<p>There&#8217;s rebelliousness to Nigel&#8217;s cooking that I really admire. He inspires me to feel that cooking is an adventure and perfection is never the aim. Preparing meals to please yourself and your loved ones &#8211; that&#8217;s what it&#8217;s all about. I say hooray for Nigel. I bloomin&#8217; love him!</p>
<p>Anyway, enough of the Nigel love-fest and on with the cooking. This is one of my favourite recipes from Kitchen Diaries 1. Rather than using the almond or orange biscuits that Nigel suggests, I opted for crushed shortbread (shortbread fingers, to be exact). &nbsp;So what I ended up with was a version of a strawberry shortcake tart &#8211; and my goodness did it taste good!</p>
<p>The tart makes an ideal dessert, but my preference is as an afternoon treat accompanied by a glass of chilled prosecco.</p>
