<h1 id="kt-adv-heading_011e1c-8f" class="kt-adv-heading_011e1c-8f wp-block-kadence-advancedheading"><strong>Dream Cake</strong></h1>



<p>Dream Cake originates from Denmark, the bottom layer is a batter sponge that is light as a cloud and the  rich buttery coconut sugar topping is the perfect compliment. This recipe is pretty straightforward but the finished cake is surprisingly sophisticated. Makes about 12-16 slices and it keeps really well for a few days in an airtight box</p>

<p>3 eggs<br>225 g caster sugar<br>½ tsp vanilla sugar or extract<br>225 g plain flour<br>2 tsp baking powder<br>150 ml whole milk<br>75 g melted butter <br></p>



<p><strong>For the topping:</strong><br>50g butter<br>75g desiccated coconut<br>125 g dark brown sugar<br>40 ml whole milk<br>Pinch of salt</p>



<h3><strong>Method</strong></h3>



<p>Grease and line a 23cm diameter cake tin</p>



<p>Preheat the oven to 175C Fan.</p>



<p>In a large bowl whisk eggs, caster sugar and vanilla extract until white and frothy.</p>



<p>In a separate bowl, sift the flour and baking powder together.</p>



<p>Fold the dry ingredients into the egg mixture. Add the milk into the melted butter and then pour into the batter and fold in gently until just combined. Be careful not to overmix.</p>



<p>Pour the batter into your cake tin and bake in the oven for 35-40 mins</p>



<p>While to cake is cooking you can begin to make your topping. Simply add all the ingredients into a saucepan and gently melt together.</p>



<p>Remove the cake from the oven just before it&#8217; starts to brown, carefully spread the topping over the cake in a even layer and then return to the oven for a further 5 mins.</p>



<p>When the cake is done, remove the cake from the oven and leave to cool in the tin a little before placing on wire rack to cool completely (it&#8217;s best to leave the cake in the paper to cool so you don&#8217;t loose any of the delicious topping!).</p>

<p class="has-text-align-left">When I&#8217;m working at home it&#8217;s all too easy for me to turn into the queen of procrastination. Endless cups of tea, a few loads of washing, a bit of sock pairing and anything else that&#8217;s got nothing to do with what I&#8217;m actually supposed to be doing! I also usually put my oven to good work, either roasting up some veggies for quick meals, baking or slow cooking a stew.</p>



<p class="has-text-align-left">This week I&#8217;ve moved away from my winter staples of roasted root veg and onto my current obsession: fennel! I love this stuff and can quite happily much through a whole raw bulb all to myself. This time I thought I&#8217;d try something a little different by using some roasted fennel in my lunchtime salad. This is a lovely light, protein-packed dish with some pretty punchy flavours. The apple doesn&#8217;t keep so add it at the last minute.</p>



<p class="has-text-align-left"><strong>Serves one but simply double up the quantities for two people.</strong></p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>2 tablespoons of maple syrup<br>1 fillet of ready to eat smoked mackerel (I used peppered mackerel)<br>A handful of dill<br>1 red eating apple, grated.<br>1 bulb of fennel<br>Juice of half a lemon lemon juice</p>



<p class="has-text-align-left"><strong>Method</strong><br>Chop up your fennel into chunks and place on a roasting tray, cover with the maple syrup &amp; give it a good mix round <br>Roast on a medium heat for around 20mins or until it softens and browns.<br>Grate your apple and place into a bowl with water and lemon juice.<br>To serve, place the cooked fennel on a plate and top with the apple and chucks of mackerel, sprinkle with some chopped dill and a little lemon juice.</p>

<p>We love biscotti at our house and tend to buy a big bag of them every so often to go with a coffee. I never actually realised how easy they are to make until I had go myself this week. They have very few ingredients to make the basic dough (just flour, eggs, sugar &amp; baking powder) and from here you can add your own extras to your own taste, such as nuts, spices, or even chocolate.</p>



<p>I followed Paul Hollywood&#8217;s recipe for Orange &amp; Hazelnut biscotti, but to be honest most of the recipes I&#8217;ve seen are pretty similar with just variations of flavourings. Chocolate dipping sauce is next on my list&#8230;</p>

<p class="has-text-align-left">With the festive season fast approaching it&#8217;s lovely to kick back and relax with a glass of fizz and some yummy nibbles. I&#8217;ve been experimenting with creating some vegetarian snacks and I&#8217;m pretty pleased with how these came out &#8211; they even got the thumbs up from my little one who is a tough critic at the best of times!</p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>1 pack of ready rolled puff pastry<br>200g block of feta cheese<br>2 red peppers<br>1 teaspoon of dried oregano<br>A small cup of milk for brushing<br>Poppy or sesame seeds to decorate</p>



<p class="has-text-align-left"><strong>Method</strong><br>Preheat your oven to 200oc<br>Cut your peppers into strips, coat with a little vegetable oil and roast in pre-heated oven for around 20mins<br>Once your peppers are cooked leave to cool slightly, then cut into small pieces and add to a bowl<br>Crumble in your feta, add oregano and mix well to combine<br>Lay out your pastry flat width-wide on your worktop and cut into 8 squares<br>Add a spoonful of mixture along the middle of each square , edge to edge.<br>Fold the square in half and firmly press the edges together to join<br>Turn the pastry over cut into your desired size of bites (they will rise a little in the oven)<br>Repeat with the remaining mixture and pastry squares.<br>Arrange your bites on a pre-lined baking tray with a little space between each one, brush with a little milk and top with poppy seeds.<br>Bake in the oven for around 12-15mins until golden.</p>

<p class="has-text-align-left"><br>A little Mexican colour and spice to liven up lunch or dinner. These tacos are really easy to make and are perfect for a light dinner &#8211; you can add as many toppings as you like. If you’re looking to cut down on the amount of meat in your diet then black beans are a great option as they are packed with protein to provide you with a really balanced plate. Tinned beans are also a budget-friendly option. This recipe keeps really well (minus the avocado) so make a few extra and you’ll have tomorrow’s lunch ready to go!</p>



<p class="has-text-align-left">Ingredients<br>1 tin 400g black beans<br>1 red pepper, cut into small chucks<br>1 tbsp paprika<br>1 tsp cumin<br>1 clove garlic, crushed<br>1 tsp of cocoa<br>1 large tomato, cut in small chunks<br>1 tsp of vegetable oil</p>



<p class="has-text-align-left">To serve<br>Grated cheddar cheese<br>Small tin of sweetcorn<br>1 lime<br>An avocado<br>4 small taco wraps<br>1 small red onion<br>Handful of cherry tomatoes</p>



<p class="has-text-align-left">Method<br>1.) Preheat your oven to 200oc<br>2.) Add your beans, chopped pepper, tomato, garlic, cocoa, paprika and cumin to a small roasting tin, mix in the oil and pop in the oven for 20 mins<br>3.) Fold your tacos in half and lightly toast them in a toaster for 1 min on a low setting until lightly brown on each side (be cautious here as the tacos are thin and can burn very quickly if left too long)<br>4.) To serve it’s much more fun to bowl up all your toppings and your black bean mixture individually and allow people to fill their own tacos at the table. A good squeeze of lime on your avocado will prevent it going brown.</p>

<p class="has-text-align-left"><strong>Ingredients</strong><br>125g sugar<br>150g oats<br>50g raisins<br>125g butter<br>1tsp vanilla extract<br>1 tbsp golden syrup<br>75g plain flour<br>1/4 tsp baking powder<br>1/4 tsp mixed spice</p>



<p class="has-text-align-left"><strong>Method</strong><br>Heat the oven to gas mark 4 180oc/160oc<br>Grease or line a large flat baking sheet<br>Cream the butter and sugar together until light and fluffy<br>Beat in the eggs and vanilla essence<br>Add in the remaining dry ingredients and mix until well combined.<br>Shape tbsp amounts into balls and place well spaced onto your baking tray.<br>Flatten slightly with a fork so they bake evenly.<br>Bake in the oven for 10 minutes until lightly browned.</p>

<p class="has-text-align-left"><strong>Ingredients</strong><br>1 butternut squash cut into small chunks<br>1/2 can coconut milk<br>2 pints of vegetable stock<br>1 onion finely chopped<br>1 clove garlic, crushed<br>1 tbsp vegetable oil</p>



<p class="has-text-align-left"><strong>Method</strong><br>Lightly fry the onion in the oil on a low heat for around 4/5 mins or until it has softened.<br>Add the garlic and butternut squash and cook for a further 5 minutes.<br>Add the stock, bring to the boil then turn down to a simmer and cover. Leave to cook down for 30 minutes.<br>After 30 minutes add the coconut milk remove from the heat and leave to cool slightly.<br>Once slightly cool blend to a smooth consistency<br>To serve, top with chilli flakes and a drizzle of extra virgin olive oil.</p>

<h1 class="has-text-align-left">DIY Pot Noodle</h1>



<p class="has-text-align-left">Stuck for lunch ideas? How about this cosy homemade pot noodle?</p>



<p class="has-text-align-left">Packed full of healthy ingredients &#8211; design your own flavour combinations with either veggie, vegan or meat.</p>



<p class="has-text-align-left">Add quick cook noodles to a heat resistant jar.</p>



<p class="has-text-align-left">Top with 1/4 stock cube (I used Kallo Low Salt Veggie).</p>



<p class="has-text-align-left">Add your choice of veg. Try: Sweetcorn, spinach, grated or strips of carrot, chillies, sliced spring onion and some protein such as chickpeas, silken tofu, chicken or ham.</p>



<p class="has-text-align-left">Add a tbsp of soy sauce, a tsbp of lime juice and a tbsp of honey.</p>



<p class="has-text-align-left">Top with boiling water, pop a lid on and leave to stand for 5 minutes.</p>



<p class="has-text-align-left">Stir and enjoy!</p>

<p class="has-text-align-left" id="block-e68f9f73-f523-4444-98bc-defda7c9619f"><br>These pizzas make a great quick lunch and you can customise the toppings to your liking. Using wraps not only makes a much lighter meal but also means they cook in just 20mins. They are surprisingly filling too!</p>



<p class="has-text-align-left"><strong>Ingredients</strong><br>1 wrap (wholemeal or plain depending on your preference)<br>2 tbsp of passata (use one with added basil if you can find it) or two tablespoons of tinned tomatoes<br>Handful of pre-grated mozzarella cheese<br>Sprinkle of dried oregano</p>

<p class="has-text-align-left" id="block-23610810-3643-4245-b841-236df8c130ca"><strong>Method</strong><br>Preheat oven to 200c<br>Spread 2 tbsps of tomato passata on each wrap and spread evenly to the edges using the back of a spoon.<br>Add your chosen toppings evenly around the pizza<br>Top with a generous handful of cheese<br>Cook in the middle of your oven for about 15mins (or until the toppings are browned to your liking)</p>

<p>School days are long for little learners and they are usually ravenous by the time you pick them up. So ward off hangry tantrums with a few of these nutritious suggestions to keep their tummies topped up until dinner.</p>



<p><strong>Fruity yogurt pots</strong></p>



<p>These yogurt pots are fun for kids and you use any kids of fruit to create colour combinations. You can also make them in advance to keep in the fridge ready for after school</p>



<ul><li>Use any kind of tupperware pot, old jam jar or a small drinking glass (if your child is old enough to use this safely)</li><li>Start by creating a layer of fruit using your child&#8217;s favourite. This could be pieces of tinned fruit (fruit in juice rather than syrup if possible), slices of chopped banana, pear, apple, berries or cubes of melon.</li><li>Next add a layer of sugar free granola or muesli</li><li>Top with plain natural or greek yogurt</li></ul>

<p><strong>Homemade tortilla chips and hummus</strong></p>



<p>It&#8217;s surprisingly easy to make your own tortilla chips and they make a far better alternative to shop bought crisps which tend to be really salty.</p>



<ul><li>Preheat your grill to a medium setting</li><li>Cut up a couple of tortilla wraps into triangles and lay on a baking tray, give a small spray of oil or brush lightly with vegetable oil. Sprinkle lightly with paprika and pop under the grill, turning over once they&#8217;ve started to lightly colour on one side.</li><li>Word of warning! The tortilla chips will brown very quickly so keep an eye on them so they don&#8217;t burn!</li></ul>
